I went to a Brazilian steak house in Niagara Falls, Cananda and absolutely loved a red slaw I tried there.  Of course, they wouldn’t tell me what was in it.  Once the vacation was over I was in the kitchen trying to recreate it-  lol.  This turned out to be pretty close.  So much, my husband thought I had found the recipe!   This is perfect for hot summer days and goes great with several dishes.  I even use the slaw as a dual purpose dish.  It’s  awesome when sautéed and a great way to boost dishes like beef & broccoli, stir-fry, etc.

Ingredients:

Slaw-

  • 1 Small red cabbage (approx. 6 cups shredded)
  • 2 Green onions (approx. 3 Tbsp finely chopped)
  • Sweet pepper (approx. 3 Tbsp finely sliced)

Dressing-

  • 3 Tbsp extra virgin olive oil
  • 1 lemon (juiced)
  • 1 Tbsp honey
  • 1 Tbsp apple cider
  • 1 Tbsp minced garlic
  • salt & pepper to taste

Directions:

  1. Finely slice the cabbage, green onion and peppers.  Place in bowl and set to side.  Phew, that was all the hard work!

  2. Combine all the dressing ingredients and whisk together.
  3. Pour over the cabbage mix and lightly fluff to evenly coat.

For the best result  I usually make mine the day before to bring all the flavors out.  Hope you enjoy!

American Flag Cake

I know this post is a bit late, but I saw this cake on pinterest and absolutely loved how it looked!  Except, I only found some pictures 😦  I  decided to give it a try and make my own version.  Surprisingly, it’s not nearly as hard as it looks! I did take some pictures as I was making it, but it was the first try.  I was  caught up having too much fun and forget to do some documenting!4th of July Cake rebeccaanne.com

I decorated the cake with a vanilla whipped cream topping.  I used two boxed cake mixes, which made 4 round 8″ cakes.  1 mix was strawberry for the red layers (with extra red dye).  The second box was 1 white cake left plain and 1 white cake with a lot of blue dye.  To give the cake a more clean look between the layers I made a blend of seedless strawberry and raspberry spread.  To finish it off I made ice-cream stars.  I did this by adding some yellow and orange food dye to a vanilla &  strawberry ice-cream, pressed it into a 9×13 baking dish, re-chilled,  and used a star cookie cutter to get the different sizes.4th of July Flag Cake RebeccaAnne.com

The cake got lots of attention, but more importantly it tasted great!  The strawberry and vanilla was a great combo and using the strawberry cake also helped with the coloring process- lol!

Watermelon is on of my favorite summer flavors and these little shooters capture the flavor and look perfectly! 🙂  You can skip the vodka (and add 3/4 cup water) and still make a cute family friendly treat, too!

Ingredients:

  • 10-12 limes
  • 1 package of watermelon flavored Jell-o
  • 1 cup water
  • 1/2 cup Smirnoff  watermelon vodka
  • 1/4 cup Smirnoff sour apple vodka
  • Chia seeds, poppies or chocolate sprinkles

Directions:

  1. If using chia seeds place about 1 tsp in a 2 tbsps. of water.
  2. Slice limes in half and remove the pulp. If you don’t have a small juicer here’s an easy way to remove the pulp!

  3. Bring water to simmer and dissolve gelatin.
  4. Remove from heat and stir in vodka.  If using chia seeds add them in and make sure they separate. Remove any clumps.
  5. Pour the gelatin mix into the lime halves  If using poppy seeds you can lightly sprinkle some on now.
  6. Chill 3-4 hours.
  7. Once the gelatin is set, cut the halves in half to create water melon quarters.  If you use chocolate sprinkles add them on now.
  8. Get ready to party 🙂

Augua de Fresa Recipe

This is one of my favorite summer time drinks. It has a very light and sweet strawberry taste. When I lived in Seattle there were a few restaurants that offered Mexican strawberry water (agua de fresa) during the summer.  Forget the lattes once I tried this I was hooked.

Ingredients:

  • 4 cups sliced strawberries
  • 1/2 white sugar
  • 1Tbs of vanilla

In a one gallon container add the sugar, strawberries and vanilla.  Fill the container with water, stir and let sit.  It’s that simple! I place my jar outside to sit in the sun and in the evening bring it in to chill.  The next day it’s ready to enjoy.
